Fate recently led to a meeting between P’Nut Street Noodles and Shannan Ponton, a personal trainer from The Biggest Loser Australia and spokesperson for Cure Cancer. Like P’Nut, Shannan is passionate about helping local communities lead healthy, happy lives and supports cancer research.
The big C has affected many of us in some way, shape or form. For Shannan it was a scare with skin cancer while for the P’Nut family it was losing close relatives to the battle. Cancer is now more common than ever, that is why it’s so important to support organisations like Cure Cancer, who raise much-needed funds for up-and-coming scientists to continue research towards finding a cure.
After meeting with Shannan and learning about his partnership with Cure Cancer, it made sense to join forces to get behind the cause, as giving is part of P’Nut’s core values. We decided to create two new dishes with Shannan, and contribute a portion of proceeds back to Cure Cancer. Which means you are joining in on the fight against cancer too, when you purchase these two dishes.
The collaboration really has been a perfect match, as Shannan used his knowledge of nutrition and fitness, while Chef Nut has contributed his knowledge of authentic Asian ingredients and proven ancient cooking techniques, giving you two new healthy Asian meal options. You see, we still make all our sauces from scratch, which are the basis of all our dishes. We only use the freshest, highest quality ingredients we can find, local Aussie produce and most importantly we believe in being preservative-free. Using the hot wok technique, we wok up your food fresh, fast and hot so the ingredients retain as much nutritional value as possible.
It was these common passions and beliefs that led to the development of more healthy Asian dishes, while raising funds for cancer research. After many months of meetings, taste testing, and product trialling, Shannan and Chef Nut agreed on two dishes. These were specifically curated to help you reach your health and fitness goals while fueling your body with nutrients to keep you going:
Lean and Keen, AKA Black Pepper Chicken Stir-Fry:
Lean and tender chicken stir-fried with nourishing vegetables in a punchy pepper sauce. This dish was specifically designed by Shannan and Chef Nut to maximize fat burning. It’s lower in carbohydrates and calories using the anti-inflammatory powers of black pepper to boost metabolism.
According to Shannan, you can enjoy the Lean N Keen anytime, “Carbohydrates and calories have been kept to a minimum whilst upping the vegetables and ‘good stuff’. We’re even doing some of the work for you! Black Pepper is renowned for its many health benefits which include, enhanced fat burning, anti-inflammatory properties and most importantly speeding up metabolism. That means more flavour, greater fat loss and better results… just by eating!”
The Energiser, AKA Satay Chicken with Jasmine Rice:
Chicken and assorted vegetables cooked in P’Nut’s irresistible satay sauce and topped with cashew nuts. Packed with protein and good fats, this dish was created by Shannan and Chef Nut to help you recharge after a workout or busy day.
Feeling sluggish? The Energiser is for you! Shannan says it’s a boost of energy you need to get you through your day and workout.
“I have specifically designed ‘The Energiser’ by upping the net protein, adding seasonal vegetables that are full of nutrients and including low GI carbohydrates to maximize muscle recovery and boost energy. Peanuts and cashews provide the necessary ‘good fats’. Enjoy 30-60 mins before or after your training session to optimize your body’s recovery, promote lean muscle growth and glycogen uptake. It’s perfect to recharge and get primed to face another busy and active day.”
Healthy Asian Recipes
P’Nut’S Special Satay Sauce Recipe
6-8 long dried red chilies, seeded and soaked in warm water
3 cloves garlic
2 lemongrass sticks, white parts only
1 inch galangal
1 tablespoon coriander powder
½ tablespoon cumin powder
1/4 cup oil
2 cup dry roasted peanuts, unsalted
1 cup water
2 tablespoon brown sugar
1/2 teaspoon salt
1 tablespoon tamarind pulp, soaked in 1/4 cup water for 15 minutes, squeeze the tamarind pulp for juice and discard the pulp
1 cup coconut milk
Crush the peanuts coarsely with mortar and pestle or mini food processor and set aside.
Chop the spice paste ingredients and blend until fine.
Heat oil and fry the spice paste until aromatic and spices have released colour.
Add the peanuts, tamarind juice and water.
Add brown sugar and coconut milk and stir thoroughly.
Simmer in low heat while continue stirring for about 3-5 minutes until the peanut sauce turns smooth.
Healthy Satay Stir-Fry Recipe
500g chicken breast fillets cut into strips preferably free range or protein of choice
1 tbs oil
1 red capsicum small
1 cup broccoli
1/2 cup brown onion
P’Nut satay sauce
1. Heat oil in wok at medium heat
2. Add choice of meat along with vegetables and cook for 3-5 minutes
3. Once the protein is cooked, add peanut sauce with some water or stock. Toss for another minute
4. Serve with Jasmine rice and sprinkle some crushed peanuts
Eating For A Great Cause
To help Shannan Ponton and Cure Cancer in their fight against cancer, we are donating $1 from every Lean N Keen, AKA Black Pepper Chicken Stir Fry, and The Energiser, AKA Satay Chicken with Jasmine Rice, sold across all 11 P’Nut restaurants. There will also be ‘Tap to Donate’ machines and coin donation boxes set up at all P’Nut restaurants for those who want to donate while still eating their favourite P’Nut dishes.
P’Nut Street Noodles x Shannan Ponton x Cure Cancer Media Launch Event
Gathering at P’Nut Zetland, an intimate crowd of 25 diners got together on Wednesday 23rd October to cure cancer by dining for a cure. Crowd comprising of media such as Women’s Weekly, and influencers such as @paulpayasalad, attendees received an exclusive insight on how the PNut Street Noodles x Shannan Ponton x Cure Cancer partnership came to be and why Shannan is so passionate about raising funds to fight cancer.
The evening was all about the food, after all, we are dining for a cure! The night started with the crowd tasting some of P’Nut most favourites, such as juicy prawn dumplings, crunchy vegetarian spring rolls and satay chicken wings from our Snacks Menu and moving onto Nasi Goreng and Cashew Nut Noodles from our Street Food menu. While the foodies dined on P’Nut classics, Shannan outlined the importance of coming together to fight cancer. Recalling the story of the day his wife had found a mark on the back of his calf while in Bali, assuming it to be nothing at first, but turning out to be melanoma. Shannan’s battle has a happy ending as it was detected and treated early, while others are not so lucky and that is why we continue to fight.
Shannan went onto to explain why being good to your body and eating healthy is very important and just because you need food fast, does not mean it needs to be junk food. Giving Shannan’s dishes the perfect introduction for the night, the crowd got an exclusive first taste of Lean N’ Keen, AKA Black Pepper Chicken Stir-Fry and The Energiser, AKA Satay Chicken with Jasmine Rice.
Shannan then passed the mic over Ankur Sehgal, CEO of P’Nut Street Noodles, who was equally excited about the partnership and the new dishes.

The dishes we’ve created with Shannan Ponton aim to help locals enjoy a nutritious and delicious meal while helping raise money for cancer research. Helping people be healthy and happy while giving back to the community is important to us.”
