Drawing inspirations from his travels across Asia, Matt brings you the soup of your dreams straight from the streets of Chang Mai. This winter, slurp up and enjoy his take on the traditional Khao Soi from Northern Thailand. He blends rich coconut milk with a fragrant red curry paste to heat your belly and mouth with just enough heat. Trust us, this soup will be your best friend this winter!
The Toppings
Khao Soi is all about the toppings, and the rich and creamy broth is best served with our tender braised chicken breast. We top each bowl with;
- a generous serving of fried egg noodles for crunch and that nutty, rich flavour you get from everything fried,
- pickled mustard greens for that authentic flavour,
- a lemon for acidity,
- and raw red onion for some bite.
Do it like the locals
Matt Sinclair has created the perfect Khao Soi, but everyone likes their soups just a little bit different. In Northern Thailand, where this soup hails from, it’s common practice to “dress up” the soup to your liking. We asked our staff from North Thailand how they usual eat their Khao Soi, and here is what they usually add:
- Chilli oil
- Sambal
- Fish sauce
- Soy Sauce
