This sauce: traditionally, made using slow cooked dashi kombu mixed with Mirin, red onion, brown sugar, gluten free soya sauce, garlic, celery and ginger for over 2 hours. It’s a simple yet incredibly satisfying dish that highlights the natural goodness of fresh produce.
